Pumpkin Protein Energy Bites

Have you ever carved pumpkins on Halloween and wondered what to do with the excess meat of your pumpkins? Well, definitely don’t let it go to waste! Simply cut the raw pumpkin into chunks and boil until tender. Then, use a mixer to blend until smooth. Set aside 1 cup, and freeze the remaining pumpkin puree for future recipes. Canned pumpkin will also work great for this recipe.
Pumpkin Protein Bites
•1 cup pumpkin puree
•1 cup quick oats
•1 cup almond flour
•1 cup vanilla protein powder
•1/2 cup HP’s Bees Raw Honey
•1 tsp cinnamon
•1/2 cup dark chocolate chips
Directions:
In a large bowl, mix together pumpkin, oats, flour, protein powder, raw honey, and cinnamon. Stir until mixture forms a dough. Fold in chocolate chips.
Roll the dough into small balls. Place on a parchment paper lined baking sheet. Chill in the refrigerator for 1 hour. Enjoy!
